"Baking with sourdough - isn't that very difficult? I don't have time for that."

In this workshop, you will find that baking with sourdough can be easy and helpful in many way. It takes less time than baking with yeast, it tastes much better than yeast bread, you know exactly what the bread contains and, not the least, it can solve an essential challenge in many people: pain in the stomach. No more puffy stomachs after the bread meals!

At Nøsen Yoga and Fjellhotell, we come to a practical and pleasant course where you can try everything you need to bring your leaven into your everyday life. We will bake bread, sweet baking and biscuits. There will be tastings and all you bake, you will bring home alongside with a fresh and bubbly sourdough starter.

  • 10:00 - 11:00 - A little theory of what leaven is and how to maintain the starter

  • 11:00 - 13:00 - Leisure

  • 13:00 - 14:00 - Lunch

  • 14:30 - 17:30 - We meet to grind flour, put dough together and make a leaven

  • 17:30 - 19:00 - Leisure

  • 19:00 - 20:00 - Dinner

Sunday

  • 07:00 - 08:30 - Morning Yoga

  • 09:00 - 10:00 - Light breakfast and smoothies

  • 10:00 - Check-out

  • 10:00 - 13:00 - We meet to cut bread, shape cinnamon rolls, bake and taste.

  • 13:00 - 14:00 - Lunch

Nøsen Yoga and Fjellhotell is situated in scenic surroundings, so I highly recommend using the time between the leavening sights to enjoy what nature has to offer.

My name is Ida Julie Mørk Albertsen and I am running the Surdeigshimmelriket in Norway. I keep running courses in baking with sourdough.

I love to cook and have always been curious about leaven. I started experimenting with leaven about 4 years ago, and when the first starter reached the light of day, I was in love! I've experimented and made all mistakes you can make with the leaven, and just get more and more hooked. And as a crazy bonus, the fermented dough, which is leaven, has cured my husband's IBS disease! When I started with sourdough I was so confused by how complicated I, as a beginner, thought the recipes for sourdough were. Therefore, I make a big point in my courses to simplify and make everything as easily understandable as possible. Sourdough for the people.

Can you knit? I usually compare it to learning to bake with leaven with learning to knit. If you can't knit, you only see a few sticks and some yarn, but if you knit you might see a pair of socks or a sweater with a pattern (if you are good) when you look at the pins and the yarn. Similar with sourdough baking, too. There are some codes that must crack by practicing. And when they're jacking you can impress yourself (and others) with your talents
